Ingredients for Masala Pulled Bun- TBD Recipe

  • Pav bhaji masala 1 1/2 tablespoons

  • Mozzarella cheese , grated 3/4 cup

  • Potato , boiled, peeled and grated 1 medium

  • Refined flour (madia) 200 grams

  • Salt to taste

  • Turmeric powder 1/4 teaspoon

  • Red chilli powder 1 teaspoon

  • Fresh coriander leaves , finely chopped 1 tablespoon

  • Garlic , chopped 8-10 cloves

  • Sugar 1 tablespoon

  • Warm milk 80 millilitres

  • Small overripe banana , mashed 1/4 small

  • Fresh yeast 1 teaspoon

  • Lemon juice 1 tablespoon

  • Butter , softened 30 grams

  • Oil to grease

  • Chaat masala to taste

  • Butter , melted for brushi


Step 1

Sift refined flour, salt, turmeric powder, red chilli powder and pav bhaji masala into a large bowl. Add coriander leaves, and garlic and mix well.

Step 2

Mix together sugar, warm milk, mashed banana and yeast in a small bowl and set aside to prove for 15-20 minutes.

Step 3

Add the yeast mixture to the flour mixture and mix well. Add the lemon juice and butter and knead into a soft dough.

Step 4

Mix lemon juice and butter in another small bowl. Knead the dough well, grease with oil and cover with a muslin cloth and allow to prove for 20- 30 minutes.

Step 5

In a yet another bowl mix together potato, chaat masala, salt and half the grated cheese.

Step 6

Knock back the dough and divide into equal portions. Roll out both the portions into ½ inch thick roundels.

Step 7

Place one dough roundel on a baking tray, place some potato mixture in the centre of a dough roundel and spread it outwards, leaving half an inch from the edges.

Step 8

Now spread the grated cheese over the potato mix. Apply water to the edges of the roundel, keep the 2nd rolled-out dough over it and press the edges to seal.

Step 9

Brush it with a mixture of butter and oil, cover it with a muslin cloth and keep it aside to rise again for another 15-20 minutes.

Step 10

Preheat oven to 180º C.

Step 11

Brush the above layer with a mix of oil and butter, place the baking tray in the preheated oven and bake this for 30-40 minutes.

Step 12

Allow to cool and demould, and serve hot.
