Ingredients 

  • 1 egg yolk
  • Salt to taste
  • 1/4 teaspoon white pepper powder
  • 1/4 teaspoon French mustard
  • 1/4 teaspoon sugar
  • 1 teaspoon vinegar
  • 1 cup oil
  • 1 teaspoon lemon juice

Method

  1. Take a clean bowl. Place egg yolk, salt, white pepper powder, mustard powder, sugar and vinegar in it and mix it thoroughly with a whisk or hand or else transfer to a blender.
  2. Add oil, a little at a time, whisking/blending continuously, until all the oil is incorporated. Finish the sauce by adding lemon juice and adjust the seasoning.
