Mexican Lasagna Recipe This is made with tortillas and chicken mince. By Sanjeev Kapoor 28 Sep 2015 in Recipes Course New Update Main Ingredients Tortillas, Chicken mince Cuisine Mexican Course Main Course Chicken Prep Time 11-15 minutes Cook time 21-25 minutes Serve 2 Taste Spicy Level of Cooking Moderate Others Non Veg Ingredients list for Mexican Lasagna Recipe 8 Tortillas quartered 400 grams Chicken mince minced 2 tablespoons Chilli powder 2 tablespoons Cumin powder 1 cup Tabasco sauce 1 tin Black beans drained 1 cup Sweet Corn to taste Salt 3 tablespoons Olive oil 2 1/2 cups Cheddar cheese grated Black olives for garnish Method Preheat the oven at 180º degrees. Heat two tablespoons olive oil in a non stick pan. Add minced chicken and saute for five minutes. Add chilli powder and cumin powder. Saute till brown. Add taco sauce and saute well. Add black beans and sweet corn and salt to taste. Mix well. Grease the baking tray with the remaining olive oil. Layer the base of the tray with tortillas. Pour the chicken mixture on top, and sprinkle some cheese. Repeat for the second layer. Bake for fifteen minutes till cheese is slightly brown.
