Mexican Pizza

Ingredients

Dough

  • 3 tablespoons cornmeal
  • 2 tablespoons refined flour + for dusting
  • ¼ teaspoon turmeric powder
  • Salt to taste
  • ½ teaspoon red chilli powder
  • 2 tablespoons oil
    Stuffing
  • 1 tablespoon butter
  • 1 medium onion, finely chopped
  • 1 cup boiled red kidney beans (rajma)
  • ¼ teaspoon turmeric powder
  • 1 tablespoon chopped garlic
  • 1 teaspoon red chilli powder
  • Salt to taste
  • ¼ cup tomato ketchup + to serve
  • 1 tablespoon butter
  • 3 tablespoons pizza sauce
  • ½ cup grated mozzarella cheese

Method

  1. To prepare the dough, in a bowl, add cornmeal, refined flour, turmeric powder, salt, red chilli powder and 1 tablespoon oil in a bowl. Add water gradually and mix well. Knead into medium soft dough like roti. Add remaining oil and mix well. Set aside for 10-15 minutes.
  2. For stuffing, heat a non-stick deep pan, add butter and melt it. Add onion and sauté on medium heat till onion turns red. 
  3. Mash the boiled rajmas with a masher, add in pan and mix well. Add turmeric powder, garlic chopped, red chilli powder, salt and ¼ cup tomato ketchup. Add 3 tablespoons water. Mix well. Cook for 2-3 minutes on medium heat. Set aside to cool.
  4. Divide dough into ball sized portions. Place a portion of dough on a worktop, dust some flour and roll into thin discs.
  5. Heat a non-stick pan, place a rolled disc and apply butter on both the sides. Turnover and let it cook on another side. Heat till light golden brown specs appear on both sides. 
  6. Prepare another roti following same procedure. While still on heat, add 2-3 spoonful of stuffing on base, place another prepared roti on top. Apply pizza sauce and spread it completely. Add grated cheese. Cover and cook on low heat till base become hard and the cheese melt.
  7. Transfer pizza on a worktop and slice out a pizza slice with a pizza slicer. Transfer pizza on a serving pizza plate 
  8. Serve hot with tomato ketchup.
