Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Mixed Mushroom with Beancurd Recipe

  • Button Mushrooms 10-12

  • Oyster Mushrooms soaked in hot water 10-12

  • Shiitake mushrooms soaked 3-4

  • Silken beancurd 50 grams

  • Oil 1 tablespoon

  • Garlic finely chopped 1 tablespoon

  • Vegetable stock 1 cup

  • Light soy sauce 1/2 teaspoon

  • Small broccoli separated into florets 1

  • Salt to taste

  • Black peppercorns crushed to taste

  • Cornflour slurry 1 tablespoon

  • Beansprouts to garnish

Method

Step 1

Heat oil in a non-stick pan, add garlic and sauté for half a minute. Add button mushrooms and 1 cup vegetable stock. Add soy sauce and mix well. Add soaked oyster mushrooms and mix well.

Step 2

Roughly chop shiitake mushrooms and add and mix well. Cook for 2-3 minutes.

Step 3

Add broccoli florets and mix well. Add salt and crushed peppercorns and mix well. Cook for 5-7 minutes.

Step 4

Cut beancurd into big cubes and add to the pan and mix well. Add cornflour slurry and mix well. Cook till it thickens.

Step 5

Transfer onto a serving plate, garnish with bean sprouts and serve immediately.
