  • 800 grams Muskmelon peeled, seeded and cubed
  • Juice of ½ lemon
  • ¼ cup Castor sugar (caster sugar)
  • Pumpkin seed brittle
  • ½ cup Pumpkin seeds
  • 1 cup Castor sugar (caster sugar)
  • 1 teaspoon Sea salt

Method

  1. Spoon the musk melon cubes into a blender jar and blitz to a puree. Add lemon juice and castor sugar and blend again.
  2. Transfer the mixture into a silicon container and freeze, stirring every hour, until fully frozen.
  3. To make pumpkin seed brittle, heat castor sugar in a non-stick pan till it melts. Simmer for 4-5 minutes or till turns golden brown. Pour on a silicon sheet.
  4. Sprinkle pumpkin seeds and sea salt and set aside to cool. Once set, break into pieces.
  5. Place granite scoops into 4 individual Martini glasses. Sprinkle brittle pieces and serve immediately.
