By Sanjeev Kapoor 27 Mar 2017 in Recipes Course New Update Main Ingredients Muskmelon, Juice of ½ lemon Cuisine Fusion Course Desserts Prep Time 7-8 hour Cook time 0-5 minutes Serve 4 Taste Sweet Level of Cooking Easy Others Veg Ingredients list for Musk Melon Granita with Pumpkin Seeds Brittle 800 grams Muskmelon peeled, seeded and cubed Juice of ½ lemon ¼ cup Castor sugar (caster sugar) Pumpkin seed brittle ½ cup Pumpkin seeds 1 cup Castor sugar (caster sugar) 1 teaspoon Sea salt Method Spoon the musk melon cubes into a blender jar and blitz to a puree. Add lemon juice and castor sugar and blend again. Transfer the mixture into a silicon container and freeze, stirring every hour, until fully frozen. To make pumpkin seed brittle, heat castor sugar in a non-stick pan till it melts. Simmer for 4-5 minutes or till turns golden brown. Pour on a silicon sheet. Sprinkle pumpkin seeds and sea salt and set aside to cool. Once set, break into pieces. Place granite scoops into 4 individual Martini glasses.
