Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Nimbu Pani Recipe

  • Lemons 2

  • Sugar 1 cup

  • Black salt (kala namak) to taste

  • Salt to taste

  • Fresh mint sprigs for garnish

  • Lemon slices for garnish

Method

Step 1

To make sugar syrup, heat a non-stick pan, add sugar and 1 cup water, mix well and cook on medium heat till sugar melts. Transfer into a bowl and set aside to cool.

Step 2

Halve the lemons. For each portion squeeze the juice of ½ lemon into a serving glass. Add black salt, salt, 1-2 tbsps sugar syrup and ½ cup chilled water. Cover the glass with another glass and shake well to mix.

Step 3

Garnish with a lemon slice and a mint sprig and serve immediately.
