Combine the tomatoes, sea salt, olive oil, garlic and ginger in a baking dish. Place the dish in the preheated oven and roast for twenty to twenty-five minutes or till dry. Remove from oven and cool down to room temperature.Blend the roasted tomato mixture with coriander leaves and tamarind pulp till smooth. Serve as an accompaniment with your choice of bread.
