Ingredients
- 4 pieces Surmai, darne cut
- 2 tablespoons olive oil
- 4-5 garlic cloves
- 15-20 basil leaves
- ¼ cup pine nuts
- Oil for shallow frying
- 1 small onion, sliced for serving
Method
- Blend together oil, garlic cloves, basil leaves and pine nuts in a blender to make pesto.
- Marinate the fish in pesto and set aside.
- Heat sufficient oil in a non-stick pan for shallow-frying.
- Shallow-fry the marinated fish till cooked.
- Drain on absorbent paper.
- Garnish with mint sprig and serve warm with sliced onion.
