Ingredients list for Paella Marinera

  • 1 1/2 cup Paella Rice soaked
  • 10-12 Clams
  • 20-25 Medium prawns (300 grams)
  • 2 Fish fillet cut into 1 inch pieces
  • 1/2 cup Olive oil
  • 1 medium Onion thinly sliced
  • 2 medium Tomatoes sliced
  • 2 Sausages sliced
  • 3 1/2 cups Fish stock
  • 2 teaspoons Paella spice-mix
  • a few Saffron (kesar)
  • 1/4 cup Shelled green peas blanched
  • 1 small Red capsicum cut into thin strips
  • to taste Salt
  • 2 Lemon cut into wedges

Method

  1. Heat olive oil in a paella pan or a wide non stick pan. Add onion and sauté for one minute. Add the rice and sauté for two to three minutes.
  2. Add one cup of water and let it cook. Add the tomatoes and stir. Add the sausages and stir again. Add the stock, sprinkle paella spice and saffron and let the mixture come to a boil. Cook for five minutes.
  3. Add clams, prawns, fish pieces and green peas and mix. Add red capsicum and salt and mix. Cover with aluminium foil. Reduce heat and simmer till the rice is done. You can also cook it in a preheated oven at 180°C till done. Ensure that the rice is not coo
  4. Serve hot with lemon wedges.
