Ingredients list for Palak Paneer Sandwich

  • 1 medium bunch Spinach leaves (palak) blanched and shredded
  • 200 grams Cottage cheese (paneer) grated
  • 8 Bread slices
  • 1 tablespoon Oil
  • 1 teaspoon Cumin seeds
  • 1 tablespoon Garlic chopped
  • 1 Green chilli chopped
  • to taste Salt
  • 4 tablespoons Processed cheese grated
  • 3 tablespoons Mozzarella cheese grated
  • as required Butter
  • to serve Tomato ketchup
  • to serve French fries

Method

  1. Heat oil in a non-stick pan, add cumin seeds and saute till their colour changes. Add garlic and green chilli, mix and sauté for 1 minute.
  2. Add spinach, mix and sauté for 1 minute. Add salt, mix and sauté for 1-2 minutes. Transfer into a bowl.
  3. Add cottage cheese, processed cheese and mozzarella cheese and mix well.
  4. Apply butter on one side of 4 slices of bread, spread a generous portion of stuffing on each evenly. Cover with remaining slices of bread and apply butter on top.
  5. Heat a griller, grease it with a little butter and place 2 sandwiches, at a time, on it with the butter side up, close and grill till evenly golden on both sides.
  6. Cut the sandwiches in half diagonally and place them serving platter. Serve hot with French fries and tomato ketchup.
