History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Paneer Pakora Recipe

  • Cottage cheese (paneer) , cut into 1 inch cubes 250 grams

  • Oil to deep fry

  • Gram flour (besan) 1 cup

  • Yogurt 2 tablespoons

  • Ginger-garlic paste 1 tablespoon

  • Fresh coriander leaves , chopped 1 tablespoon

  • Carom seeds (ajwain) 1/2 teaspoon

  • Red chilli powder 1 teaspoon

  • Salt to taste

  • Chaat masala to sprinkle

  • Onion rings to serve

  • Lemon slices to serve

  • Fresh mint sprigs to garnish

  • Green chutney to serve

Method

Step 1

Heat sufficient oil in a kadai.

Step 2

Take gram flour in a mixing bowl, add yogurt, ginger-garlic paste, coriander leaves, carom seeds, red chilli powder, salt and sufficient water and whisk to make a semi-thick and smooth batter.

Step 3

Put cottage cheese cubes to the batter and mix well.

Step 4

Slide the cottage cheese cubes into hot oil, one at a time, and deep-fry till golden brown and crisp. Drain on absorbent paper and sprinkle some chaat masala on top.

Step 5

Place pakoras on one side of a serving platter, place onion rings and lemon slice and mint sprig on the other side and serve hot with green chutney.
