Paneer Taka Tak

Paneer pieces cooked in spicy dry Indian masala along with capsicums in onion tomato gravy. Goes well with hot chapatis. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 250 grams cottage cheese (paneer) cut into cubes
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 large onion, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 green chilli, chopped
  • 1 medium tomato, finely chopped
  • 1 1/2 teaspoons red chilli powder
  • 1/4 teaspoon turmeric powder
  • 2 teaspoons coriander powder
  • 1 teaspoon pav bhaji masala
  • Salt to taste
  • 1 small green capsicum, cut into small squares
  • 1 small yellow capsicum, cut into small squares
  • 2 tablespoons fresh cream
  • 1 tablespoon cashewnut paste
  • Onion rings for garnish
  • Lemon wedges for garnish
  • Fresh coriander sprigs for garnish

Method

  1. Heat oil in a non-stick pan, add cumin seeds and saute till their colour changes. Add onion, mix and saute till translucent.
  2. Add ginger-garlic paste, mix and sauté till raw smell disappears. Add green chilli and tomato, mix well and saute till tomato softens.
  3. Add red chilli powder, turmeric powder, coriander powder, pav bhaji masala and salt and mix well. Add some water, mix and cook for 1-2 minutes.
  4. Add green capsicum and yellow capsicum, mix well and cook for 5-6 minutes.
  5. Add fresh cream and mix well. Add cashewnut paste and mix well. Add cottage cheese cubes, toss well and cook for 4-5 minutes.
  6. Transfer into a serving bowl, garnish with onion rings, lemon wedges and coriander sprig And serve warm.
