History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Papdi Chaat Recipe

  • Large whole wheat tortillas 3

  • Oil to deep fry

  • Mixed sprouts 1/2 cup

  • Onions chopped 1/4 cup

  • Green chillies chopped 1-2

  • Medium potatoes boiled, peeled and mashed 2

  • Mixture of red chilli powder,dried fenugreek leaves,salt, dried mango powder 1 teaspoon

  • Sweet date and tamarind chutney as required

  • Green chutney as required

Method

Step 1

Cut the tortillas into bite sized pieces.

Step 2

Heat sufficient oil in a deep pan and deep fry the pieces till crisp. Drain on absorbent napkin.

Step 3

Put mixed sprouts, onions, green chillies, potato and spice mixture in a bowl and mix well.

Step 4

Arrange the tortilla pieces on a serving plate, put some of the sprout mixture on each. Drizzle a little sweet date and tamarind chutney and green chutney.

Step 5

Serve immediately.
