Ingredients list for Parsi Omelette

  • 8 Eggs
  • 1 Medium onion finely chopped
  • 1 teaspoon Red chilli powder
  • 1/4 teaspoon Turmeric powder
  • to taste Salt
  • 1-2 Green chillies finely chopped
  • 1 teaspoon Ginger-garlic paste
  • 1 Medium tomato finely chopped
  • 2 tablespoons Fresh coriander leaves finely chopped
  • 4 tablespoons Ghee
  • to serve Jam
  • to serve Onion quarters
  • 8 to serve Pavs

Method

  1. For each omelette, break 2 eggs into a bowl, add ¼ chopped onion, ¼ teaspoon red chilli powder, a pinch of turmeric powder, salt, ¼ chopped green chillies, ¼ teaspoon ginger-garlic paste, ¼ chopped tomato and ½ tablespoon coriander leaves and beat everything well together with a fork. .
  2. Heat 1 tablespoon ghee in a non-stick pan and pour the omelette mixture into it. Cook for 2-3 minutes or till the underside is done. Flip it over and cook till other side is similarly done.
  3. Fold into half and transfer onto a serving plate. Make more omelettes in the same way.
  4. Serve hot with jam, onion quarters and pavs.
