By Sanjeev Kapoor 31 Mar 2017 in Recipes Course New Update Main Ingredients Macaroni, Multigrain bread Cuisine Italian Course Snacks and Starters Prep Time 16-20 minutes Cook time 26-30 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Pasta Sandwich 1 1/2 cups Macaroni boiled and cut into 1/2 cm pieces 8 slices Multigrain bread 2 teaspoons Olive oil 1 medium Onion chopped 3-5 cloves Garlic chopped 1 Red capsicum cut into 1/2 cm pieces 8-10 Mushrooms chopped to taste Salt 1/4 teaspoon Crushed black peppercorns 1/2 cup Tomato concasse 1/4 cup Tomato ketchup 3-4 Fresh basil leaves chopped as required Butter 1 cup Mozzarella cheese grated Method Preheat oven to 180° C. Heat olive oil in a non-stick pan, add onion and sauté for a minute. Add garlic and sauté for ten seconds. Add capsicum and mushrooms and sauté for a minute. Add salt, crushed black peppercorns and sauté for thirty seconds. Add tomato concasse, tomato ketchup, basil leaves and pasta and mix well. Apply some butter on each bread slices and arrange it over the baking tray. Place the tray in the preheated oven and bake till the bread slices are well toasted. Divide the mixture into eight equal portions and put it over each bread slice. Sprinkle some mozzarella cheese on top and bake till the cheese melts. Serve hot.
