Pav Bhaji Au Gratin

Pav Bhaji Au Gratin

Ingredients 

  • Toasted pav Slices as required
  • 2 tablespoons pav bhaji masala
  • 3 medium potatoes , boiled, peeled and mashed
  • 1/4 cup grated mozzarella cheese 
  • 1/4 cup grated processed cheese 
  • 2 tablespoons oil
  • 4 tablespoons butter
  • 1 large onion , finely chopped
  • 1 tablespoon ginger-garlic paste
  • 2 medium tomatoes , finely chopped
  • 1-2 green chillies, chopped
  • 1/2 cup tomato puree
  • 2 tablespoons red chilli paste
  • 1/2 cup grated cauliflower 
  • 1/2 cup blanched green peas 
  • 1 small capsicum , finely chopped
  • Salt to taste
  • 2 tablespoons chopped fresh coriander leaves 
  • Fresh coriander sprig for garnish
  • Lemon wedges to serve

Method

  1. Preheat the oven at 180˚C.
  2. Heat oil and 2 tbsps butter in a non-stick pan, add onion and sauté till golden brown. Add ginger-garlic paste and mix well. Cook for a minute.
  3. Add tomatoes and green chillies and mix well. Cook till pulpy.
    Add tomato puree, mix and cook till the oil separates.
  4. Add red chilli paste, cauliflower, green peas, and mix well. Add potatoes, capsicum, salt and pav bhaji Masala and mix well. Mash the mixture using a masher and cook for 1-2 minutes.
  5. Add 1 cup water and mix well and cook for 1-2 minutes. Add remaining butter and mix, add coriander leaves and mix well. Take the pan off the heat.
  6. Transfer the mixture into a small oven proof pan, sprinkle mozzarella cheese and processed cheese on top. Bake for 10-15 minutes.
  7. Garnish with coriander sprig and serve hot with toasted pav slices and lemon wedges.
