Just when you thought that green peas are only used to add that extra punch to your savoury dishes, try a rich, creamy matar ki kheer to satiate your sweet buds too!

Ingredients for Pea And Cilantro Pesto Soup Recipe

  • Green Peas frozen 2 cups

  • Cilantro trimmed 2

  • Salt to taste

  • Lemon juice 1/2 teaspoon

  • FOR PESTO SAUCE

  • Cilantro (fresh coriander leaves) stem removed 2 cups

  • Pine nuts(chilgoza) chopped 2 tablespoons

  • Parmesan cheese grated 2 tablespoons

  • Olive oil 2 tablespoons

  • Lemon juice 2 tablespoons

  • Garlic 2 cloves

  • Salt 1/4 teaspoon

Method

Step 1

To make the cilantro pesto, blend together cilantro, pinenuts, parmesan cheese, olive oil, lemon juice, garlic and salt till smooth.

Step 2

Boil two cups of water in a pan.

Step 3

Add the frozen peas, spring onions, salt and lemon juice and cook for ten minutes.

Step 4

Discard the spring onions and blend the peas with the four tablespoons cilantro pesto in a blender.

Step 5

Remove from the blender and serve with a drizzle of olive oil.
