Ingredients
- 2 cups green peas frozen
- 2 spring onions, trimmed
- Salt to taste
- 1/2 teaspoon lemon juice
- For cilantro pesto
- 2 cups cilantro (coriander) leaves, stem removed
- 2 tablespoons pine nuts(chilgoza) chopped
- 2 tablespoons parmesan cheese grated
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 garlic cloves
- 1/4 teaspoon salt
Method
- To make the cilantro pesto, blend together cilantro, pinenuts, parmesan cheese, olive oil, lemon juice, garlic and salt till smooth.
- Boil two cups of water in a pan.
- Add the frozen peas, spring onions, salt and lemon juice and cook for ten minutes.
- Discard the spring onions and blend the peas with the four tablespoons cilantro pesto in a blender.
- Remove from the blender and serve with a drizzle of olive oil.
