Pesto Fish

The freshly made pesto sauce adds a vibrant and herby flavor to the fish pieces, which are then shallow fried to a crispy golden brown. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 4 pieces Surmai, darne cut 
  • 2 tablespoons olive oil 
  • 4-5 garlic cloves
  • 15-20 basil leaves
  • ¼ cup pine nuts
  • Oil for shallow frying
  • 1 small onion, sliced for serving

Method 

  1. Blend together oil, garlic cloves, basil leaves and pine nuts in a blender to make pesto. 
  2. Marinate the fish in pesto and set aside. 
  3. Heat sufficient oil in a non-stick pan for shallow-frying. 
  4. Shallow-fry the marinated fish till cooked. 
  5. Drain on absorbent paper. 
  6. Garnish with mint sprig and serve warm with sliced onion.
