Cut pineapple into thick slices and remove the core. Place the slices in the pan and grill, flipping sides, till evenly golden from both sides. Transfer the grilled slices into a mixer jar and let them cool. Add mint leaves, powdered sugar, chaat masala, dried mango powder, roasted cumin powder, black salt, lemon juice, ice cubes and 2 cups of water and blend. Pour the shikanji into 4 tall glasses. Decorate each glass with a pineapple wedge, a lemon slice and a mint sprig and serve chilled.
