Ingredients for Pizza Pockets Recipe

  • Pizza base 2

  • Tomato , chopped 8 tablespoons

  • Mixed capsicums (red, green, yellow) , chopped 4 tablespoons

  • Sweet corn kernels , boiled 2 tablespoons

  • Cottage cheese (paneer) , grated 6 tablespoons

  • Processed cheese , grated 6 tablespoons

  • Red chilli flakes 1 1/2 teaspoons

  • Dried oregano 1 1/2 teaspoons

  • Salt to taste

  • Tomato ketchup 4 tbsps + to serve

  • Butter for basting

Method

Step 1

Preheat oven to 180˚C.

Step 2

Take tomatoes in a mixing bowl, add bell peppers, sweet corn, cottage cheese, processed cheese, red chilli flakes, oregano, salt and tomato ketchup and mix well.

Step 3

Halve both pizza bases and open out the pockets. Stuff the pockets generously with the cheese mixture and press lightly.

Step 4

Place the stuffed pizza pockets on a baking tray, keep the tray in the preheated oven and bake for 8-10 minutes.

Step 5

Remove from oven and baste with butter. Cut the pockets into four pieces and arrange them on a serving plate.

Step 6

Serve hot with tomato ketchup.
