Ingredients list for Prawn and Pomelo Salad

  • 200 grams Prawns steamed
  • 100 grams Pomelo peeled
  • 100 grams Tomatoes diced
  • 100 grams Spring onions sliced
  • 50 grams Coconut shredded
  • 1 medium Onion sliced
  • 1 stalk Lemon grass only the soft part
  • Dressing
  • 1 tablespoon Red chilli paste
  • 2 tablespoons Olive oil extra virgin
  • a handful Basil leaves shredded
  • 2 tablespoons Jaggery water
  • 2 tablespoons Peanuts/Hazelnuts
  • to season Salt
  • 1 tablespoon Lemon juice

Method

  1. In a dry mixing bowl, whisk the oil, jaggery water, lemon juice and chilli paste.
  2. Add the shredded basil and season with salt.
  3. In another bowl mix all the ingredients for the salad, add the dressing and give it a good massage.
  4. Serve with a sprinkling of roasted peanut and hazelnut.
