How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Protein Rich Poha Recipe

  • Pressed rice (poha) 1 1/2 cups

  • Sprouted moth beans 1/2 cup

  • Sprouted green gram (ankurit moong) 1/2 cup

  • Salt to taste

  • Onion , peeled 1/2 large

  • Oil 1 tablespoon

  • Curry leaves 10-15

  • Cumin seeds 1/2 teaspoon

  • Ginger 1 inch

  • Green chilli 1

  • Turmeric powder 1/2 teaspoon

  • Lemon 1/2

  • Red radish slices to garnish

  • Fresh coriander sprig to garnish

Method

Step 1

Heat a non-stick pan, add moth, green gram, ¼ cup water and salt. Mix well and cook till the sprouts soften.

Step 2

Meanwhile roughly chop onion. Heat oil in a non-stick pan, add curry leaves and cumin seeds and sauté till the seeds change colour.

Step 3

Add onion, sauté well and cook till translucent. Finely chop ginger, green chilli and add to the pan. Mix well and cook for 1 minute.

Step 4

Add cooked sprouts mixture, cover and cook for 2 minutes. Add turmeric powder and salt and mix well.

Step 5

Take pressed rice in a large bowl, wash and strain well.

Step 6

Add pressed rice to the onion-sprout mixture and mix well. Cook for 1-2 minutes.

Step 7

Squeeze the juice of lemon into the pan, mix well and cook for 1-2 minutes.

Step 8

Transfer the mixture into a serving bowl, garnish with red radish slices and coriander sprig and serve hot.
