How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Pulao Khichdi Recipe

  • Rice soaked 1 cup

  • Split green gram skinless (dhuli moong dal) 1/4 cup

  • Pure ghee 2 tablespoons

  • Bay leaves torn 2

  • Cloves 2-3

  • Cauliflower florets cut into small pieces 6-8 large

  • Carrots cut into 1 inch pieces 1 1/2 medium

  • French beans cut into 1 inch diamonds 6

  • Shelled green peas 1/4 cup

  • Green chillies slit 2

  • Salt to taste

  • Turmeric powder 1/2 teaspoon

Method

Step 1

Dry roast the moong dal in a non stick kadai till brown. Heat the ghee in a pressure cooker. Add the bay leaves and cloves.

Step 2

Add the cauliflower, carrots and French beans and sauté till brownish in colour. Add the peas and mix well. Add the rice, green chillies, salt and turmeric powder.

Step 3

Mix well. Add the roasted dal and six cups of water.

Step 4

When the mixture comes to a boil, put the lid on and cook under pressure till pressure is released three to four times (three to four whistles). Serve hot.
