Ingredients for Quinoa and Vegetable Pulao Recipe

  • Quinoa soaked for 1 hour 1 cup

  • Button mushrooms 7-8

  • Green peas 1/4 cup

  • Oil 1 1/2 tablespoons

  • Spring onion bulbs with stems 2

  • Cumin seeds 1 teaspoon

  • Cloves 4-5

  • Garlic cloves 8-9

  • Green chillies 4

  • Vegetable stock 2 cups

  • Salt to taste

  • Milk 1 cup

  • Micro greens for garnish

Method

Step 1

Heat oil in a non-stick pan.

Step 2

Slice spring onion bulbs. Reserve the stems.

Step 3

Add cumin seeds, cloves and garlic cloves to the pan.

Step 4

Slit green chillies without cutting through and add alongwith spring onion bulbs and saute well.

Step 5

Chop spring onion stems and add.

Step 6

Quarter mushrooms and add. Toss and saute well.

Step 7

Add quinoa and mix well. Add vegetable stock and salt, mix and cook till the mixture come to a boil.

Step 8

Add green peas and mix well. Add milk, mix, cover and cook on medium heat till fully done.

Step 9

Garnish with micro greens and serve hot.
