Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Rajgira Chikki - SK Khazana Recipe

  • Amaranth puffed 1 cup

  • Jaggery (gur) chopped 1 cup

  • Cocout oil 1 1/2 tablespoons

  • Rock salt (sendha namak)

  • Green cardamom powder

  • Mixed nuts slivered 1/4 cup

Method

Step 1

Heat coconut oil in a non-stick pan, add jaggery and rock salt and mix till the jaggery melts.

Step 2

Add puffed rajgira, green cardamom powder and mixed nuts and mix well and cook for 1-2 minutes. Take the pan off the heat.

Step 3

Transfer the mixture into a greased burfi tray and spread it evenly. Keep aside for 5-10 minutes. Cut into squares and set aside to cool completely.

Step 4

Loosen the squares and serve or store in an airtight container as required.
