Reshmi Paneer

Ingredients

  • 250 gms cottage cheese (paneer)
  • 3 tbsps oil
  • ½ tsp cumin seeds
  • 2 medium onions, thickly sliced
  • 2 tsps ginger paste
  • 2 tsps garlic paste
  • ¼ tsp turmeric powder
  • 1 tsp coriander powder
  • ½ tsp red chilli powder
  • 2 tbsps cashewnuts paste
  • ¼ cup yogurt
  • 3 tbsps tomato puree
  • 1 large green capsicum, cut into thick strips
  • 1 large yellow capsicum, cut into thick strips
  • 1 large red capsicum, cut into thick strips
  • 2 medium tomatoes, cut into thick strips
  • Salt to taste
  • A pinch of garam masala powder
  • A pinch of green cardamom powder
  • 2 tbsps crumbled mawa / khoya
  • 2 tbsps cream
  • A few sprigs fresh coriander leaves

Method

  1. Heat oil in a non-stick wok, add cumin seeds and onions and saute.
  2. Cut cottage cheese into thick fingers.
  3. When onions soften, add ginger paste and garlic paste and saute for 1 minute. Add turmeric powder, coriander powder and red chilli powder, mix and saute.
  4. Add cashewnuts paste and mix. Add yogurt and mix. Add tomato puree and mix.
  5. Add green, yellow and red capsicums, tomatoes and mix. Saute for1 minute.
  6. Add salt, cottage cheese fingers, garam masala powder, green cardamom powder, crumbled mawa and cream and mix.
  7. Simmer for 2 minutes. Chop coriander leaves and add.
  8. Transfer into a serving bowl and serve hot.
