Ingredients list for Roasted Onion, Garlic And Pumpkin Soup

  • 2 medium Onions
  • 2 whole pods Red pumpkin
  • 700 grams Red pumpkin (bhopla/kaddu) peeled and thinly sliced
  • 3 tablespoons Oil
  • to taste Salt
  • 1/2 cup Fresh cream optional

Method

  1. Heat one and a half tablespoons oil in a pan and add the pumpkin slices.
  2. Sprinkle some salt over them and pot roast them on medium heat till well roasted.
  3. Place the onions and garlic pods, without peeling, in a microwave oven and cook on HIGH for one minute so that they soften.
  4. Heat the remaining oil in another pan and roast the onions and garlic pods on medium heat till fragrant and the peels begin to loosen.

  6. Add half a cup of water.
  7. Cover and cook on medium heat till the pumpkin gets completely soft.
  8. Cool. Transfer the mixture into a mixer, add quarter cup of water and grind to a smooth puree.
  9. Transfer the puree into the pan, adjust salt and bring it to a boil.
  10. Add cream and stir.
  11. Serve hot.
