The capital city of Himachal Pradesh in India, Shimla has many farms of capsicum. Hence, the Hindi name. Besides this, though not loved by all, this veggie is the most essential whenever you plan to dish-up an Indo-Chinese recipe. Stuff them up with cheese, beans, other veggies or meats or just make a simple sabzi, it will surely add that exciting crisp to your creations!

Ingredients for STUFFED CAPSICUM- SK Khazana Recipe

  • Capsicum mixed coloured 4 medium

  • Paneer (cottage cheese) grated 1 cup

  • Oil 1 tablespoon

  • Garlic chopped 1 teaspoon

  • Onion finely chopped 1 medium

  • Sweet corn kernels boiled 1/4 cup

  • Green peas 1/4 cup

  • Carrot grated 1 medium

  • Red chilli sauce 1 tablespoon

  • Salt to taste

  • Processed cheese grated 1/4 cup

Method

Step 1

Heat oil in a nonstick pan. Add garlic, once the garlic turns golden brown, add onions and sauté till golden brown.

Step 2

Add corn, green peas and carrot and sauté for 2-3 minutes. Add cottage cheese, red chilli sauce and mix well. Add salt and mix well. Cook for 2-3 minutes. Take the pan off the heat and set aside.

Step 3

Trim the base and the top of the capsciums and remove the seeds to make cavity. Reserve the tops.

Step 4

Add the processed cheese to the cottage cheese mixture and mix well.

Step 5

Preheat the oven to 180˚C

Step 6

Brush oil on capsicums and tops and arrange on baking tray and stuff the prepared stuffing. Cover with the tops.

Step 7

Bake in the preheated oven for 10-15 minutes.

Step 8

Serve hot.
