Sesame and Banana Bread The crunch of sesame seeds and the flavour of banana blend well in this delicious bread. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 11 Sep 2019 in Recipes Course New Update Main Ingredients Sesame seeds (til), Refined flour (maida) Cuisine Fusion Course Breads Prep Time 11-15 minutes Cook time 1.30-2 hour Serve 4 Taste Sweet Level of Cooking Easy Others Non Veg Ingredients list for Sesame and Banana Bread ½ cup Sesame seeds (til) toasted 1/3 cup + for dusting Refined flour (maida) 2 Ripe bananas peeled and mashed ½ cup Whole wheat flour (atta) for greasing Butter ½ brown sugar/jaggery a pinch Baking soda ¼ teaspoon + ¼ teaspoon Salt 1 tablespoon Extra-virgin olive oil 1 large Egg lightly beaten 2 tablespoons Yogurt Glaze - 1 cup Castor sugar (caster sugar) ¼ cup brown sugar/jaggery Juice of ½ lemon Method Preheat the oven to 180°C. Grease a loaf tin with some butter and dust with some refined flour. Combine together the refined flour, wheat flour, brown sugar, baking soda and salt in a bowl and mix well. Add the sesame seeds and mix. Combine together the olive oil, egg, banana and yogurt in another bowl and mix well. Add this to the flour mixture and fold well. Pour the batter in the greased tin, put the tin in the preheated oven and bake for forty-five minutes. Remove from oven, cool and demould. To make the glaze, heat a non-stick pan. Add the castor sugar, brown sugar, lemon juice and one tablespoon water, mix and cooktill the sugar melts.
