Shrimp, Leek and Spinach Pasta Pasta cooked with shrimps, leeks, baby spinach and lightly flavoured with lemon rind and cheese. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 17 Aug 2015 in Recipes Course New Update Main Ingredients Penne, Shrimps Cuisine Italian Course Noodles and Pastas Prep Time 6-10 minutes Cook time 26-30 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Non Veg Ingredients list for Shrimp, Leek and Spinach Pasta 2 cups Penne pasta 200 grams Shrimps medium, peeled and deveined 2 Leeks halved and diagonally cut 200 grams Fresh baby spinach to taste Salt 2 tablespoons Butter to taste Black pepper powder Rind of 1 lemon grated 3/4 cup Cheese sauce a pinch Red chilli flakes Method Boil five cups water in a deep non-stick pan, add salt and pasta and cook till the pasta is done. Drain. Heat butter in a non-stick pan, add leeks, salt and pepper powder and cook, stirring occasionally, till the leeks are soft. Add shrimps and lemon rind and cook, tossing frequently, for four to five minutes. Add cheese sauce, boiled pasta and spinach and mix well. Add salt, pepper powder and chilli flakes and toss. Simmer for a minute. Transfer onto a serving plate and serve hot.
