Shrimp Cakes

Ingredients 

  • 200 grams shrimp, washed
  • 2 medium potatoes, boiled, peeled and grated
  • ½ teaspoon turmeric powder
  • 2 green chillies, finely chopped
  • 1 teaspoon Malvani masala
  • Salt to taste 
  • 1 teaspoon ginger-garlic paste
  • 1½ tablespoons fresh coriander leaves chopped
  • 3 tablespoons rice flour
  •  ¾ teaspoon red chilli powder
  • 1 egg beaten
  • Panko breadcrumbs as required
  • Green chutney to serve
  • Lemon wedges to serve

Method

  1. Take shrimp in a bowl, add potatoes, turmeric powder, green chillies, malvani masala, salt, 1 tsp ginger-garlic paste, coriander leaves and rice flour and mix well.
  2. Add red chilli powder and mix well.
  3. Heat sufficient oil in a wok.
  4. Grease your hand with oil and take a portion of the shrimp mixture, shape it into a ball, slightly flatten it and make a hole in the center. Make more cakes similarly.
  5. Dip the shrimp cakes in egg coat them with panko and slide them into hot oil and, deep-fry till golden and crisp. Drain on absorbent paper.
  6. Arrange the cakes on a serving platter and serve hot with green chutney and lemon wedges.
