Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Soya Matar Masala Recipe

  • Soya chyunks soaked in warm water 1 cup

  • Green peas 1/2 cup

  • Small onions peeled and quartered 3

  • Medium tomatoes quartered 2

  • Oil 1 tablespoon

  • Cumin seeds 1 teaspoon

  • Ginger-garlic paste 1 tablespoon

  • Salt to taste

  • Red chilli powder 1 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Cumin powder 1 1/2 teaspoons

  • Coriander powder 1 1/2 teaspoons

  • Garam masala powder 1/2 tablespoon

  • Fresh coriander leaves chopped 1 tablespoon

  • Fresh coriander sprig to garnish

Method

Step 1

Put onions in a blender jar, add tomatoes and blend into a fine puree.

Step 2

Heat oil in a non-stick pan, add cumin seeds and let their colour change. Add ginger-garlic paste, mix and sauté for 1 minute or till the raw smells disappear. Add the onion-tomato puree, mix well and saute on high heat for 2-3 minutes.

Step 3

Add salt, red chilli powder, turmeric powder, cumin powder and coriander powder, mix well and cover and cook for 3-4 minutes.

Step 4

Add soya chunks, green peas and garam masala powder, mix well and cook for 3-4 minutes.

Step 5

Add coriander leaves, mix well and cook for 1-2 minutes.

Step 6

Transfer into a serving bowl, garnish with coriander sprig and serve hot.
