Treasure house of vitamins and minerals, spinach must be included in the week's menu. The usage can be varied: chopped spinach leaves cooked with potatoes is a semi-wet vegetable with rotis, a few spinach leaves thrown in with mixed vegetables and turned into a soup is lovely on a cold winter night, chopped and blanched spinach makes a different sort of raita, spinach puree can be used in cutlets or kababs, the list goes on.

Ingredients for Spinach Cheese Balls-SK Khazana Recipe

  • Spinach puree 1 cup

  • Cheddar cheese grated 1/3 cup

  • Processed cheese grated 1/3 cup

  • Cornflour 3 tablespoons

  • Dried breadcrumbs 1/4 cup

  • Panko breadcrumbs 1/4 cup

  • Salt to taste

  • Black pepper powder to taste

  • Red chilli flakes 2 teaspoons

  • Oil for deep-frying

  • Cabbage shredded 1/2 cup

  • Carrot strips 2 tablespoons

  • Lemon juice 1 tablespoon

Method

Step 1

Mix together spinach puree, cornflour, breadcrumbs, panko breadcrumbs, salt and pepper powder in a bowl.

Step 2

Mix together cheddar cheese, processed cheese, salt, pepper powder and chilli flakes in another bowl.

Step 3

Divide the cheese mixture into equal balls. Divide the spinach mixture into equal portions.

Step 4

Spread each spinach portion in your palm, place a cheese ball in the centre, bring the edges together and shape into a ball. .

Step 5

Heat sufficient oil in a kadai. Deep-fry balls golden brown. Drain on absorbent paper.

Step 6

Mix together cabbage, carrot, pepper powder, salt and lemon juice in a bowl.

Step 7

Spread this salad on a serving platter, keep the spinach cheese balls over it and serve immediately.
