Ingredients

  • 2 teaspoons oil
  • 1 tablespoon garlic
  • 1 medium onion, finely chopped
  • 1cup spinach leaves, boiled and chopped
  • Salt to taste
  • 2 teaspoons crushed black pepper
  • 30 grams Feta cheese
  • 5-6 phyllo pastry sheets
  • ¼ cup melted butter

Method

  1. Heat oil in a non-stick pan, add garlic and onion, mix and sauté till fragrant and translucent.
  2. Add spinach and mix well. Add salt and mix. Add crushed black peppercorns and mix well.
  3. Add feta cheese, mash with the back of the spoon and mix. Set aside to cool down to room temperature.
  4. Preheat oven to 180° C. Grease a baking tray.
  5. Brush butter in between 6 phyllo sheets kept one over the other. Similarly brush butter in between remaining 6 phyllo sheets kept one over the other.
  6. Once all the layers are brushed with butter, spread the prepared spinach mixture on top in a single line on one end. Roll into a cylinder till you reach the centre of the philo sheet and cut. Brush the open edge with butter to seal. Make more rolls similarly.
  7. Roll the cylinders into spirals. Arrange them on a baking tray and brush with butter. Place the tray in the preheated oven and bake for 10-12 minutes.
  8. Bring the tray out of the oven, arrange the spirals on serving platter and serve warm.
