Ingredients list for Tahini and Cardamom Ice Cream - SK Khazana
- 8-10 Green cardamoms
- 1 cup Milk
- 1 cup Fresh cream
- 3/4 cup Milk powder
- 1 cup Condensed milk
- 1/4 cup Tahini
- 1 tablespoon black sesame seeds (kale til) toasted
- 1 tablespoon White sesame seeds toasted
- for garnish Sesame Tuile
Method
- Put the green cardamom in a mortar and crush with the pestle.
- Heat in a deep non-stick pan, pour milk and fresh cream into it and whisk well. Add crushed cardamom and whisk well. Cook for 2-3 minutes. Set aside to cool for sometime. .Strain this mixture into a blender jar, add milk powder, condensed milk, and tahini and blend into a smooth mixture.
- Strain the mixture into a freeze proof container. Sprinkle black sesame seeds and white sesame seeds on top and cover the container with its tight fitting lid. Keep it in the freezer to set.
- To serve take scoops of the icecream in serving bowl, garnish with sesame tuile and serve immediately.
