Ingredients list for Tahini and Cardamom Ice Cream - SK Khazana

  • 8-10 Green cardamoms
  • 1 cup Milk
  • 1 cup Fresh cream
  • 3/4 cup Milk powder
  • 1 cup Condensed milk
  • 1/4 cup Tahini
  • 1 tablespoon black sesame seeds (kale til) toasted
  • 1 tablespoon White sesame seeds toasted
  • for garnish Sesame Tuile

Method

  1. Put the green cardamom in a mortar and crush with the pestle.
  2. Heat in a deep non-stick pan, pour milk and fresh cream into it and whisk well. Add crushed cardamom and whisk well. Cook for 2-3 minutes. Set aside to cool for sometime. .Strain this mixture into a blender jar, add milk powder, condensed milk, and tahini and blend into a smooth mixture.
  3. Strain the mixture into a freeze proof container. Sprinkle black sesame seeds and white sesame seeds on top and cover the container with its tight fitting lid. Keep it in the freezer to set.
  4. To serve take scoops of the icecream in serving bowl, garnish with sesame tuile and serve immediately.
