How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Tahiri-SK Khazana Recipe

  • Basmati rice soaked and drained 1 1/2 cups

  • Small potatoes halved 5-6

  • Cauliflower florets 10-12

  • Green peas 3/4 cup

  • Oil 2 tablespoons

  • Cumin seeds 1 teaspoon

  • Cloves 5-6

  • Black peppercorns 6-8

  • Black cardamoms 2-3

  • Cinnamon 1 inch

  • Bay leaf 1

  • Medium onions sliced 2

  • Turmeric powder 1/2 teaspoon

  • Red chilli powder 1 1/2 teaspoons

  • Cumin powder 1 teaspoon

  • Salt to taste

  • Fresh coriander sprig for garnish

Method

Step 1

Heat oil in a deep non-stick pan. Add cumin seeds and let the seeds change colour.

Step 2

Add cloves, peppercorns, cardamoms, cinnamon, bay leaf and onions, mix and sauté till onions turn translucent.

Step 3

Add potatoes and cauliflower florets and mix well. Add turmeric powder, chilli powder, cumin powder and salt and mix.

Step 4

Add ½ cup water, mix, cover and cook for 5-6 minutes. Add rice and mix.

Step 5

Add green peas and mix well. Add 3 cups water, mix, cover and cook till fully done.

Step 6

Garnish with coriander sprig and serve hot.
