Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Tandoori Phalo ka Guldasta Recipe

  • Pear 1 medium

  • Pineapple , peeled and cut into 1 inch cubes 1 medium

  • Red apple 1 medium

  • Ripe bananas 2 medium

  • Malt vinegar 3 tablespoons

  • Mustard oil 2 tablespoons

  • Tamarind paste 1 tablespoon

  • Red chilli powder 1 tablespoon

  • Coriander powder 1 teaspoon

  • Black pepper powder 1/2 teaspoon

  • Green cardamom powder 1/4 teaspoon

  • Brown sugar 1 tablespoon

  • Honey 1 1/2 tabl for drizzling

  • Salt to taste

  • Chaat masala to sprinkle

  • Roasted white sesame seeds to sprinkle

  • Green chutney to serve

  • Lemon wedges to serve

  • Onion rings to serve

  • Micro greens to serve

Method

Step 1

Cut pear into 1 inch cubes and put into a bowl. Add pineapple cubes. Cut apple into 1 inch cubes, peel and cut the bananas into thick slices and transfer into the same bowl.

Step 2

Take malt vinegar, mustard oil, tamarind paste, red chilli powder, coriander powder, black pepper powder, green cardamom powder, brown sugar and honey in another bowl. Add salt and mix well. Pour ¾ of this marinade over fruits and mix well.

Step 3

String the cut fruits onto skewers in the following sequence: pear, apple, pineapple, banana and apple.

Step 4

Heat a non-stick grill pan, place the skewers and grill the fruits on medium heat, rotating the skewers and drizzling remaining marinade over the fruits till they turn golden brown on all sides and grill marks appear.

Step 5

Remove onto a serving plate. Sprinkle chaat masala and roasted white sesame seeds, and drizzle honey.

Step 6

Serve hot with green chutney, lemon wedge, onion rings and micro greens.
