Tandoori Sandwich

A flavorful and aromatic snack where bread slices are stuffed with tender shredded tandoori chicken, grilled to perfection, and served hot. This is a Sanjeev Kapoor exclusive recipe.

Ingredients

  • 4 chicken breasts, cut into 2 inch cubes
  • Salt to taste 
  • 2½ tablespoons ginger-garlic paste 
  • 2 cup yogurt 
  • 2 tablespoons mayonnaise + to serve
  • 2 teaspoons garam masala powder
  • 2 teaspoons red chilli powder
  • 2 teaspoons dried mango powder (aamchur) 
  • 4 tablespoons chopped fresh coriander leaves 
  • 4 tablespoons tandoori mayonnaise + to drizzle
  • 12 white bread slices
  • Butter for applying + for greasing
  • Mustard paste for applying + to serve
  • Onion rings as required
  • Dried red chilli flakes to sprinkle 
  • Dried mixed herbs to sprinkle
  • 8 cheese slices
  • Dried oregano to sprinkle
  • Tomato ketchup to serve
  • Potato wafers to serve 

Method 

  1. Preheat an air-fryer to 200ºC.
  2. For the first marination, take chicken in a bowl. Add salt, ginger-garlic paste and mix well. Set aside to marinate for 15-20 minutes.
  3. For the second marination, add yogurt, mayonnaise, garam masala powder, red chilli powder, dried mango powder and coriander and mix well. Add tandoori mayonnaise and mix well. Marinate and set aside for 1 hour.
  4. Add the marinated chicken pieces in a preheated air fryer and bake for 25 minutes.
  5. Shred and add the cooked chicken on a plate. Drizzle tandoori mayo and mix well. 
  6. For one sandwich, apply butter on a bread slice and apply mustard paste.
  7. Add a portion of the chicken mixture, place a few onion rings, sprinkle dried red chilli flakes, dried mixed herbs and place a cheese slice.
  8. Apply butter on another slice and place it on top of first layer. Apply butter on top, add another portion of the chicken mixture. Sprinkle oregano and red chilli flakes. Place a few onion rings and a cheese slice.
  9. Apply butter on another slice and place over the second layer.
  10. Preheat a griller. Grease the lower portion of grill toaster with butter and place the sandwich on it and apply butter on top of the bread. Grill till golden grill marks appear on both the sides.
  11. Serve hot with mustard paste, mayonnaise, tomato ketchup and potato wafers.
