Tomato Rice

Tomato Rice is a famous South Indian recipe. It is very delicious and an easy to prepare dish. Pureed tomatoes are sauteed with spices and then added to rice. This recipe works as a perfect one pot meal. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Tomato Rice

  • 3-4 Medium tomatoes roughly chopped
  • 2 Kolum rice soaked
  • 1 tablespoon Oil
  • 1 teaspoon Cumin seeds
  • 1 cup Bottle gourd cut into cubes
  • 1 Medium potato cut into cubes
  • to taste Salt
  • 1 Green chilli slit
  • 2 teaspoons Ghee
  • to serve Raita
  • to serve Papad

Method

  1. Heat oil in a pressure cooker, add cumin seeds and sauté till they change colour.
  2. Add bottle gourd and potato, mix and sauté for a minute. Add tomatoes, mix and sauté for 1-2 minutes.
  3. Add salt and green chilli, mix well and saute for 2-3 minutes. Add rice and mix well. Add 3½ cups water and mix.
  4. Add ghee and mix. Cover the cooker with its lid and cook under pressure till 2-3 whistles are released.
  5. Transfer into a serving bowl and serve hot with raita or yogurt or with papad and pickle.
