South Indian food is based on a calculated and scientific culture that has been passed down from one generation to another. Ingredients for Tomato Rice Recipe

  • Medium tomatoes roughly chopped 3-4

  • Kolum rice soaked 2

  • Oil 1 tablespoon

  • Cumin seeds 1 teaspoon

  • Bottle gourd cut into cubes 1 cup

  • Medium potato cut into cubes 1

  • Salt to taste

  • Green chilli slit 1

  • Ghee 2 teaspoons

  • Raita to serve

  • Papad to serve

Method

Step 1

Heat oil in a pressure cooker, add cumin seeds and sauté till they change colour.

Step 2

Add bottle gourd and potato, mix and sauté for a minute. Add tomatoes, mix and sauté for 1-2 minutes.

Step 3

Add salt and green chilli, mix well and saute for 2-3 minutes. Add rice and mix well. Add 3½ cups water and mix.

Step 4

Add ghee and mix. Cover the cooker with its lid and cook under pressure till 2-3 whistles are released.

Step 5

Transfer into a serving bowl and serve hot with raita or yogurt or with papad and pickle.
