Ingredients
- 4-5 medium tomatoes
- 50 grams goat Cheese
- 6-8 green olives
- A few black olives, sliced into roundels
For Dressing
- 4 tablespoons olive oil
- 12-15 fresh mint leaves + for garnishing
- 4-5 pickled jalapeno slices
- 2 teaspoons lemon juice
- Salt to taste
- 1 teaspoon mustard powder
Method
- Slice tomatoes into roundels and arrange them on a serving platter each roundel overlapping the other.
- Soak goat’s cheese in warm hot for some time so that the saltiness reduces. Crumble goat cheese and sprinkle over tomatoes.
- For dressing, put olive oil in a blender jar, add mint leaves, jalapenos, lemon juice, salt and mustard powder and blend well.
- Add green and black olives to the tomatoes in the serving plate, pour the dressing on top, garnish with mint leaves and serve immediately.
