By Sanjeev Kapoor 04 May 2016 in Recipes Course New Update Main Ingredients Lemon pickle, Basmati rice Cuisine Fusion Course Rice Prep Time 16-20 minutes Cook time 16-20 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Volcanic Lemon Vegetable Rice 2 tablespoons Lemon pickle Basmati rice 2 small Carrots cut into diamonds, blanched 1/2 cup French beans cut diagonally in 1 inch, blanched 1/2 cup Cauliflower florets blanched 1/2 cup Green peas blanched 3 cups Cooked basmati rice 2 tablespoons Oil 1 large Onion chopped 10-12 cloves Garlic chopped 1/2 cup Coconut milk 4 Fresh red chillies chopped 1/2 teaspoon Turmeric powder to taste Salt 2 Vegetable stock cubes crumbled 1 cup White sauce Method Heat the oil in a non stick pan. Add the onion and sauté till light golden. Add the garlic and sauté till golden. Place the rice in individual bowls, drizzle the coconut milk and heat it in the microwave oven. Add the red chillies, lemon pickle and two cups of water to the pan and stir. Add turmeric powder, salt and the stock cubes. Simmer for a minute and transfer into a bowl. Blend with a hand blender. Add the white sauce to the pan and stir in the blended sauce. Mix well, adjust salt and simmer for two minutes. Add carrot, cauliflower, French beans and green peas and mix. Pour the vegetable gravy over the rice and serve immediately.
