Ingredients for Vratwali Aloo Rassa Sabzi Recipe

  • Potatoes , boiled, peeled and mashed 5 medium

  • Ghee 1 tablespoon

  • Cumin seeds 1 teaspoon

  • Red chilli powdefr 1 teaspoon

  • Salt to taste

  • Sugar 1 teaspoon

  • Roasted peanuts , powdered 1/4 cup

  • Fresh coconut , scraped 2 tablespoons

  • Fresh coriander leaves , chopped 2 tablespoons

  • Fresh coriander sprig to garnish

Method

Step 1

Heat ghee in a deep non-stick pan. Add cumin seeds and once they start to change colour, lower the heat and add red chilli powder, salt, sugar and mix well.

Step 2

Add boiled potatoes and mix well. Add powdered peanuts, coconut and coriander leaves and mix well.

Step 3

Add 2 cups water and mix and cook on medium heat for 4-5 minutes.

Step 4

Transfer into a serving bowl, garnish with coriander sprig and serve hot with puris.
