Ingredients 

  • 5 potatoes, boiled and peeled
  • 7-8 fresh parsley sprigs
  • 1 tablespoon olive oil
  • 1 onion
  • 4-5 black olives, seeded
  • 4-5 garlic cloves
  • Salt to taste
  • Crushed black peppercorns to taste
  • 1 tablespoon parmesan cheese powder
  • 8-10 Iceberg lettuce leaves

Method

  1. Cut potatoes into large cubes.
  2. Heat olive oil in a non-stick pan, add the potato cubes and saute on high heat, stirring, till the potatoes are lightly browned.
  3. Quarter onion and slice black olives. Put both of them in a chopper along with garlic and parsley and chop finely.
  4. Add salt and crushed peppercorns to the pan and mix well. Add the chopped ingredients and parmesan cheese powder and mix well. Cook for 2-3 minutes.
  5. Make a bed of lettuce leaves on a serving plate, put the potato and parsley salad over it and serve warm.
