Watermelon and Papaya Salad

Ingredients 

  • 1/2 medium medium watermelon
  • 1 cup papaya scoops
  • 1/2 raw mango
  • 1 green chilli
  • 15-20 fresh mint leaves + for garnishing 
  • 1 lemon
  • Salt to taste
  • 2 teaspoons lemon juice

Method

  1. Scoop out small balls from the watermelon with a Parisienne scoop and put them into a bowl. Add papaya scoops.
  2. Peel and cut ½ raw mango into thin slices and further into thin strips.
  3. Finely chop together green chilli and mint leaves and add to the same bowl. Grate the rind of a lemon and add. Add raw mango strips reserving some for garnishing. Add salt and lemon juice and mix well.
  4. Transfer into a serving bowl, garnish with reserved mango strips and mint leaves and serve chilled.
