Ingredients list for Watermelon and Shrikand Bites
- 20-25 Watermelon 1-inch
- 1/2 cup Hung Yogurt
- A few saffron strands
- 3 tablespoons Rose syrup
- a pinch Black pepper powder
- 1/2 teaspoon Green cardamom powder
- 1 tablespoon Cream cheese
- 4 tablespoons Powdered sugar
- for garnishing Fresh mint leaves
Method
- Dissolve saffron in 2 tbsps warm water.
- Mix together watermelon cubes, rose syrup, black pepper powder and ¼ tsp green cardamom powder in a bowl.
- To make the topping, mix together hung curd, cream cheese, sugar, saffron along with the water and the remaining green cardamom powder in another bowl. Transfer the topping into a piping bag with a star nozzle.
- Arrange the watermelon cubes onto a serving plate. Pipe the topping over the watermelon cubes. Top it with mint leaves. Pierce each piece with a toothpick and serve.
