Ingredients for Whole Wheat Rolls Recipe

  • Whole wheat flour (atta) 4 cups + 4 teaspoons (500 grams) + for dusting

  • Oil for greasing

  • Fresh yeast 4 teaspoons (20 grams)

  • Sugar 4 teaspoons (20 grams)

  • Rolled oats 1 tablespoon + for sprinkling

  • Salt 2 teaspoons (10 grams)

  • Butter 4 teaspoons (20 grams) + for sealing and brushing

  • Milk for milk wash

Method

Step 1

Preheat the oven at 200ºC. Grease a baking tray with some oil.

Step 2

Combine yeast and sugar in a bowl. Add 1-2 tablespoons warm water, mix well and set aside for 5 minutes or till bubbles appear.

Step 3

Combine whole wheat flour, 1 tablespoon oats, yeast mixture, salt and butter in a planetary mixer. Mix, adding 1 cup (250 ml) water, little by little to form a soft dough.

Step 4

Dust the worktop with some flour, remove the dough on the worktop and knead well by stretching. Divide the dough into equal portions and shape them into small buns, dusting with flour.

Step 5

Place the buns on the greased tray, cover with a wet muslin cloth and set aside to prove for 40 minutes.

Step 6

Press the buns lightly, apply milk wash on each of them, sprinkle some oats on them and put the tray in the preheated oven. Bake for 15 minutes.

Step 7

Remove from oven, brush with butter and serve hot.
