Ingredients

  • Ready-made deep dish pizza dough as required
  • Olive oil for brushing
  • Maize flour for sprinkling
  • Refined flour (maida) for dusting
  • 1½ cups grated mozzarella cheese
  • ½ cup mixed coloured capsicum triangles
  • 1 small onion, thinly sliced
  • 3-4 pickled jalapenos slices
  • 3-4 spiced salami, quartered
  • 2-3 chicken sausages, diagonally sliced
  • Salt to taste
  • Crushed black peppercorns to taste
  • 8-10 black olive slices
  • Dried mixed herbs for sprinkling
  • Pizza sauce as required
  • Parmesan cheese powder for sprinkling
  • Fresh basil sprigs for garnish

Method

  1. Preheat oven to 200º C.
  2. Brush some olive oil on all the sides of the cast iron pan and sprinkle maize flour.
  3. Dust some refined flour on the worktop and transfer the prepared dough and roll it. 
  4. Transfer the rolled dough in the greased cast iron pan and press well.
  5. Sprinkle mozzarella cheese. Arrange coloured capsicums, onion, jalapeno slices, salami quarters and chicken sausages. Sprinkle salt and crushed black peppercorns. Place the black olive slices, and sprinkle dried mixed herbs on top. Spread the pizza sauce and sprinkle parmesan cheese powder. Place the pan in the preheated oven and bake for 30-35 minutes.
  6. Bring the pan out of the oven and garnish with basil sprigs. 
  7. Cut into triangles and serve hot.
