Chicken Schnitzel Sandwich

Chicken schnitzel is a chicken breast pounded till thin, rolled in spiced flour, dipped in egg and rolled in breadcrumbs. They are then shallow fried till crisp. Here we have used the schnitzel to make double decker sandwich that is wholesome and absolutely delicious.

Ingredients

  • 400 grams boneless chicken breasts
  • 12 white bread slices
  • Salt to taste
  • Crushed black peppercorns to taste
  • 1½ teaspoons paprika powder 
  • 3 eggs
  • ½ cup refined flour
  • 1 cup dried breadcrumbs
  • Oil for shallow frying
  • 2-3 tablespoons tomato ketchup
  • ½ cup mayonnaise
  • Butter for applying
  • Assorted lettuce leaves as required
  • Onion slices as required
  • Tomato slices as required
  • French fries for serving

Method

  1. Slice the chicken breasts thinly, place between 2 plastic sheets and pound. Transfer them onto the chopping board and cut into 4 parts.
  2. Place the pieces on a plate, sprinkle salt, crushed black peppercorns and ½ teaspoon paprika powder and rub well.
  3. Repeat the same process on other side of the chicken pieces as well with salt, crushed peppercorns and ½ teaspoon paprika powder. Set aside to marinate for 10 minutes.
  4. Break eggs into a bowl, add salt and crushed peppercorns and whisk well.
  5. Spread refined flour on a plate. Add salt, remaining paprika powder and mix well. Spread the breadcrumbs on another plate.
  6. Roll the marinated chicken pieces in flour mixture, dip in egg and roll in breadcrumbs.
  7. Heat sufficient oil in a shallow non-stick pan. Place the chicken pieces and shallow fry on medium heat, turning sides, till golden brown and crisp on both the sides. Drain on absorbent paper and set aside.
  8. For the dip, take tomato ketchup in a bowl, add mayonnaise and mix well.
  9. Trim the edges of the bread slices.
  10. Apply butter and the dip on all the bread slices and place lettuce leaves on 4 slices
  11. Now place 1 chicken piece on each of these bread slices. Top them with onion rings on top. Sprinkle salt and crushed peppercorns on top. Drizzle a little more of the dip on top. Now place another bread slice with ketchup side facing upwards on top. 
  12. Place some lettuce leaves on each slice, place 1 more piece of chicken on top. Place tomato slices on top and sprinkle some salt and crushed peppercorns on top. Finally cover with the 3rd bread slice with ketchup side facing downwards.
  13. Cut into triangles. Secure with a toothpick and place them serving plates. Serve with French fries.
