Chicken Tikka Sandwich

If you have some leftover chicken tikka, use them to make these delicious sandwiches. Cut them into strips, mix them with carrot, cabbage, capsicum and mayonnaise. Spread this mixture over buttered multigrain bread slices and turn them into sandwiches

Ingredients

  • 300 grams ready-made chicken tikka
  • 8 multi-grain bread slices
  • 1 medium carrot, grated
  • 100 grams shredded cabbage
  • 1 medium green capsicum, cut it into thin strips
  • ½ cup mayonnaise
  • ½ teaspoon red chilli flakes
  • Crushed black peppercorns to taste
  • Salt to taste
  • Butter for applying
  • Iceberg lettuce leaves as required

 

Method

  1. Cut each chicken tikka into strips. Transfer this into a large bowl. Add carrot, cabbage, green capsicum, mayonnaise, red chilli flakes, crushed black peppercorns and salt and mix well.
  2. Apply butter on all the bread slices. Arrange some lettuce leaves on 4 bread slices. Place a portion of the chicken mixture over the lettuce leaves and spread it evenly. Cover with the remaining bread slices with the butter side facing down. 
  3. Trim the sides, cut the sandwich into fingers. Arrange them on a serving platter and serve.
